Ingredients
• Chopped 1.5 tbs dry cranberries
• 1 tbs olive oil
• 1 finely chopped garlic cloves
• 1/2 cup cranberry juice
• Some chopped walnuts
• Salt
• Pepper
• 1/4th cup fresh cream
• Basil leaves
Directions
Chop 1.5 tbs dry cranberries
Cranberries are very good for health especially for women
In a pan, take 1 tbs olive oil
Add 1 finely chopped garlic clove
Add 1.5 tbs dry cranberries
Don’t let garlic get too brown
Add salt and pepper. Keep 1.5 cup boiled pasta ready
Pasta should be boiled with some salt and oil
Pasta should be boiled al dante
Add some walnuts into pan
Take 1/2 cup Cranberry juice
We will reduce it to make a sauce, as we cook
Always check level of cranberry pulp behind the bottle
Cranberry pulp should be 20% in the cranberry juice
Else you will get lot of sugar in the juice
Let juice reduce for 5-7 minutes
Pasta will have mild cranberry flavor of sweet and sour, pepper spice and mild garlic flavors
Add 1/4th cup cream into pan
Cream will give you the creamy texture and it will balance all the tastes
After you add the cream, keep the flame slow
Taste the sauce at this stage
Add boiled pasta and toss them
In the end, add some basil leaves (optional)
Time for plating
Garnish with walnuts, chopped dry cranberries & basil leaves
Cranberry Pasta is ready
