Ingredients
• Some chopped cranberries
• Some finely chopped cashews
• Some finely chopped coriander
• Salt as per taste
• Red chilli powder(as per taste)
• 2 medium size boiled and mashed potatoes
• 100 gm paneer
• A pinch of turmeric powder
• 2 tbs bread crumbs/corn flour
• 3-4 chopped garlic cloves
• Some finely chopped green chillies(as per taste)
• 4 medium size chopped tomatoes
• 8-10 cashews/1.5 tbs chopped cashews
• 1 tsp cumin seeds(jeera) powder
• 2-3 cloves
• 2-3 small cinnamon(dalchini) sticks
• 2 cardamom
• 1/2 tsp turmeric powder
• 1 tsp coriander powder
• 1 tsp garam masala(optional)
• 1 tbs curd(dahi)
• 1/2 tsp sugar
• Some kasuri methi(for nice flavour)
• Oil(for frying koftas, 1 tbs to make paste & 1 tsp for gravy)
Directions
To Make Kofta :
Take a small mixing bowl, add some finely chopped cranberries
Add finely chopped cashews
Add some finely chopped coriander
Add salt as per taste
Add red chilli powder as per taste(or fresh chopped green chillies) and mix it well.
Further take a big mixing bowl, add 2 medium size boiled and mashed potatoes (do not overcook)
Add 100 gm paneer
Add red chilli powder as per taste(or fresh chopped green chillies)
Add a pinch of turmeric powder
Add salt as per taste
Add 2 tbs bread crumbs/corn flour and mix it well.
Roll out a ball from this mixture, make a small dent in the center, add 1/2 spoon stuffing in it and roll the kofta covering up the sides.
(Apply some oil in hands if the mixture is sticky and make more koftas with the same procedure)
Further heat up the appam pan, pour some oil in each cavity.
Add all koftas in each cavity, and cook both the sides until it gets golden-brown colour.
To Make Gravy :
Heat up another pan, pour 1 tbs oil in it, add chopped onions and roast it well.
Add 3-4 chopped garlic cloves
Add some finely chopped green chillies(as per taste)
Add a small piece of finely chopped ginger
Add salt as per taste
Add 4 medium size chopped tomatoes
Add 8-10 cashews/1.5 tbs chopped cashews then cover the lid and cook it until tomatoes become mushy.
Then turn off the stove and rest it to bring it to the room temperature, grind it in a mixer jar and make a thick paste.
Heat up the same pan, add 1 tsp oil in it
Add 1 tsp cumin seeds(jeera) powder
Add 2-3 cloves
Add 2-3 small cinnamon(dalchini) sticks
Add 2 cardamom
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp red chilli powder
1 tsp garam masala(optional) and add some water to avoid burning.
Now add paste in the pan with the help of strainer.
Mix it well and add some water(if the gravy is thick)
Add 1 tbs curd(dahi)
Add 1/2 tsp sugar(to balance sourness) and mix it well.
Add some kasuri methi(for nice flavour)
Take gravy in a serving bowl, add koftas in it and garnish with some chopped cranberries.
Also add some drops of curd and finely chopped coriander.
So here’s your Mouth Watering Malai Kofta With Cranberries ready!!!
