Ingredients
Dry Ingredients
• Oats Flour: 1 ¼ Cup
• Salt: ½Tsp
• Baking Powder: 1 Tsp
• Cranberry: ½ Cup
• Baking Soda: ¾ Tsp
• Chocolate Chips: ½ Cup
Wet Ingredients
• Jaggery Powder: 3Tbsp
• Coconut Oil: ½ Cup
• Water: ¼ Cup
For Garnishing
• Desiccated Coconut: ½ Cup
• Cranberry: ¼ Cup
Directions
Take a bowl and put all the dry ingredients such as Oats Flour, Baking Powder, Baking Soda and Salt. Mix them well.
In a separate bowl, take Jaggery Powder, Coconut Oil, Water and whisk until the Jaggery is dissolved.
Gradually add the dry mixture to the wet and mix with a spatula.
Add Chocolate Chips and Cranberries and mix well.
Freeze the dough in the fridge for 20 minutes. This is done to give the dough stability and make it easier to handle and make proper cookie balls.
Preheat the oven when the dough is being refrigerated.
Grease the baking tray with a bit of oil or use a parchment paper.
Take the dough out once cooled and make even round balls with your hands.
Each ball should weigh around 30-35 gm.
Now place the Cookie ball and coat it with desiccated coconut completely and add more cranberries to it.
Flatten them slightly and place them on the baking tray.
Bake it for 20-25 minutes at 180 Degree Celsius.
Let the cookies cool down on a rack.
Enjoy the cookies while they are warm.
