Cranberry Coconut Rolls

Ingredients 

• 150 gm desiccated coconut
• 2 tbs milk powder (optional)
• 100 gm condensed milk
• 2 cardamom powder (vanilla essence – optional)
• 3 tbs finely chopped US Cranberries

Directions 

Take a mixing bowl
Add 150 gm desiccated coconut
Add 2 tbs milk powder (optional)
Add 100 gm condensed milk

Add 2 cardamom powder (vanilla essence – optional)
Mix it well and form a ball
(add 1-2 tsp more condensed milk / 1 tsp ghee if the mixture is hard to bind)
Take out 1/4 of this mixture in another bowl
Add 3 tbs finely chopped US Cranberries in it
Mix it well with hands
Place a plastic wrap on chopping board
Take coconut mixture on it
Spread it making a thick layer
Then make cylindrical shape roll of cranberry mixture
Place it on coconut layer
Roll coconut layer over cranberry roll with the help of cling film
Wrap it and keep this roll in refrigerator to set
Remove the roll from refrigerator and cut it into pieces
