Cranberry Zarda Pulao

Ingredients 

• Basmati rice: 1 cup
• Sugar: ½ cup
• Milk: ½ cup
• Saffron: 1 tsp
• Green cardamom: 4 whole
• Cloves: 2 or 3
• Chironji: 50 gm
• Ghee: 4 tbsp
• Lemon juice: 1 tsp
• Cranberry juice: 3 cups
• Khoya: 50 gm
• Rose water: 2 tsp
• Chopped dried cranberries: 30 gm
• Cashew nuts: 20 gm
• Dried cranberries: 40 gm

Directions

• Sweet rice preparation where rice is cooked with sugar, saffron, dry fruits and cranberry.
First wash the rice and soak it in water for 4 hours. Strain and keep aside.
• Mix milk, khoya, saffron, rose water, chopped cranberry, cranberry juice and sugar in a bowl.
Heat water in a pan when it comes to boil, add soaked rice and cook till the rice is cooked.
• Strain it and mix with a teaspoon of ghee.
• Heat remaining ghee in a pan add cashew nuts, chironji cook till golden brown.
• Add green cardamom powder and clove, now add the mixture in the pan and bring it to boil.
• Add rice and mix gently. Cover it and cook on low heat for 10 to 12 minutes.
• Serve garnished with cranberries on top.
